Wicklow sausages are judged best in Ireland

SPECIALITY sausages from a family recipe handed down through four generations has proved a real winner for Wicklow butcher Derek Dunne, scoring him a gold medal in an All-Ireland final.

Derek clinched the top award as part of the ACBI (Association of Craft Butchers of Ireland) National competition for his traditional pork sausages which he attributes to a secret blend of spices.’

The Wicklow butcher also struck gold in the Leinster final of the ACBI Regional competition for the same recipe and scooped two silver medals for his Bratwurst sausage and Cumberland sausage in the specialist category.

No stranger to awards, Derek was ACBI Regional Champion for his speciality sausages in 2003 but has not competed over the course of the past four years.

He has also won several awards for his home-made beef burgers, also using what he describes as a tried and tested family recipe modified for modern tastes.’

So what is the secret of his success?

Top quality Irish pork which is sourced right here in County Wicklow at Newcastle,’ explained Derek.

The sausage has a high meat content plus a blend of three different spices which are added to a family recipe passed down from my father from his forefathers,’ said Derek.

The award-winning sausages are exclusive to and only available at Dunne’s butchers on Main Street in the county town, which Derek says is a feature of the family business.

We pride themselves on our traditional sausages, puddings and cuts of prime meat, which we have supplied to generations of people in Wicklow and are only available at this shop,’ added the award-winning butcher.
