Tried and tested toad in the hole

Tried-and-tested toad-in the-hole – Serves 4

Preparation time: 30 minutes
Cooking time: 25 minutes
Ready in: 55 minutes
Ingredients: 4oz sifted flour
2 large eggs
some salt
lots of herbs and black pepper
150ml milk/water (mixed half-and-half)
Directions: Mix together in a bowl to thick cream consistency. Cover for half hour while 8 sausages bake (don’t brown the sausages too much).

Heat oven to ridiculously high temperature. Put sunflower oil in cooking dish and place back in oven, and wait until the oven is back at max temperature and oil is smoking.

Mix in another 150ml milk/water mix with original mix, and add sausages. Carefully remove smoking dish from oven and pour the lot in. Close oven as quickly as possible to retain heat.

25 mins with tray at bottom of oven to avoid top of TITH burning.
