Summer Sausage – Serves 20

Preparation time: 4 days
Cooking time: 9 hours
Ready in: Under a week!
Ingredients: 5 lbs ground chuck
2 1/2 teaspoons coarsely ground pepper
4 tablespoons Morton Tender Quick salt
1 teaspoon garlic powder
2 1/2 teaspoons mustard seeds
2 1/2 teaspoons liquid smoke
Directions: 1. Mix all ingredients together in glass or plastic bowl.
2. DO NOT USE ANY METAL!
3. Cover and put in refrigerator.
4. Mix each day for 3 days.
5. On fourth day, mix and form into 5 logs.
6. Place on broiler pan.
7. Bake 150F degrees to 160F degrees for 9 hours.
