Sausage and Home Made Chips – Serves 4

|Ingredients:||8 Viking Sausages
4 – 6 Maris Piper potatoes
Freshly ground black pepper
Pinch of Maldon salt

To enjoy this low fat version of home cooked chips, you don’t even need a chip pan. Just scrub your potatoes then cut into quarters or eighths, depending on the size of the potatoes. Par boil for 10 minutes to soften slightly, then place in a roasting tin and spray with olive oil/water mist, freshly ground black pepper and a pinch or two of Maldon salt.
To infuse a herby flavour, why not rip a few springs of fresh rosemary over the top? Then bake in a hot oven until crisp and golden for about 25 minutes.
If you’re not calorie-conscious or want to give the kids a treat why not do good old fashioned chips in dripping in the chip pan and served straight from the paper like I did!
Meanwhile cook your Viking Sausages in a non-stick pan or under the grill as preferred, turning frequently to ensure they become brown and crisp on all sides.
Serve with home made mayonnaise and a Greek side salad.
