Patate e Salsicce D’Agnello al Forno di Mattoni – Serves 2

Preparation time: 30 minutes
Cooking time: 1 hour
Ready in: 1 hour and 30 minutes
Ingredients: 3 or 4 Large Lamb Sausages
6 Med. Potatoes – Yukon Gold (red or white may be substituted)
1 Tbl. Oregano leaves – dried
1/2 Cup Olive oil – Extra virgin
Directions: Preparation of the Oven

Fire the oven in time to have the temperature at about 550° F by the time the calamari will be ready to bake. As each oven is a bit different, we cannot guide you relative to the amount of wood necessary to accomplish this, nor can we suggest a time line. Our oven reaches 550° F in about 1 hour. We let it stay at that temperature for at least another 30 minutes, to even out the heat. (We fire much longer for pizza and bread)

Preparation of the Dish

Wash the potatoes, and then quarter them. (If using larger potatoes, cut them into eighths).

Put the potatoes and the sausages into a large bowl. Add the olive oil, salt and pepper and mix thoroughly to coat both the potatoes and the sausage.

Put the mixture, including the olive oil and oregano into a stainless steel baking dish. Cover the pan with aluminum foil.

Bake for 50-60 minutes. Serve immediately.
