Limerick butcher takes four medals at fair

CASTLETROY butcher Jim Flavin is celebrating this week after scooping an incredible four medals at the Munster finals of the Craft Butchers Speciality Fair.

Dublin Road butcher Mr Flavin, who rears his own produce on his farm in Grange, secured three gold medals and one silver at the awards, which recognise excellence in cooked butcher products

It is the third year in a row Limerick’s sausage king has picked up provincial awards for his produce – and this year, he beat around 100 other butchers from across Munster.

At the event last week in Nenagh, Mr Flavin secured gold medals, and high commendation from the judges for his pork and apple sausages, sun dried tomato flavoured sausages, and traditional sausages.

He also picked up a silver medal for his sausages which were flavoured with chilli and honey.

“I was delighted, and thrilled. All the hard work has once again paid off. We make our food fresh each day,” said Mr Flavin.

Unfortunately, Jim could not repeat his success on the national stage at Dublin’s RDS, where he lost out to a butcher from Clane, Kildare.

The event was judged by members of the Irish Guild of Food Writers.
