Grilled Polenta With Sausage Sauce

Grilled Polenta With Sausage Sauce – Serves 4

Preparation time: 15 minutes
Cooking time: 30 minutes
Ready in: 45 minutes
Ingredients: 1 pound hot and/or sweet Italian-sausage links, casings removed
1 large onion, chopped
1 package (24 ounces) precooked polenta, cut into 12 slices
1 can (28 ounces) crushed tomatoes in puree
1 package (12 ounces) frozen Italian-style green beans
Directions: 1. Heat nonstick 12-inch skillet over medium-high heat until hot. Add sausage and cook until browned, about 8 minutes, stirring frequently to break up sausage. With slotted spoon, transfer sausage to bowl. Discard all but 2 teaspoons sausage drippings.

2. Reduce heat to medium. To drippings in skillet, add onion and cook until soft and golden, about 15 minutes, stirring occasionally.

3. Meanwhile, preheat broiler. Place polenta slices on rack in broiling pan; sprinkle with 1/4 teaspoon coarsely ground black pepper. With pan at closest position to source of heat, broil polenta 5 minutes. With wide metal spatula, turn polenta over and broil 5 minutes longer or until lightly golden.

4. To onion in skillet, add tomatoes with their puree, frozen beans, and sausage; heat to boiling over medium-high heat. Reduce heat to low; cover and simmer 8 minutes.

5. Serve polenta slices with sausage sauce. Makes 4 main-dish servings
