Farm shop offers mulled wine sausages

A seasonal sausage flavoured with mulled wine is on the shelves at a Lincolnshire farm shop.

The humble banger has been given a seasonal overhaul with a new pork, mulled wine and plum flavour created by butchery manager Louise Boughton at Uncle Henry’s Farm Shop in Grayingham, near Gainsborough.

Using a base seasoning of herbs with some cinnamon, spices and few secret ingredients, the boozy bangers also contain several large glugs of mulled wine.

Mrs Boughton said the shop is always trying to test boundaries with unusual food flavours.

“We always introduce a festive range and wanted to make something really festive – mulled wine is a real Christmas classic,” she said.

“We had tried something similar before, but this year the recipe had changed and we’ve added a lot more mulled wine – there has been no scrimping on alcohol.

“I’m really pleased with how it has turned out and hopefully we will sell plenty of them.”

The sausages are made on site at the farm shop. Mrs Boughton tried several variations of the recipe to ensure she hit on the right balance of flavours.

Other seasonal specials created using the regular pork sausage include chestnut, white wine, apple and sage and port and cranberry.

And it’s not the first time Uncle Henry’s has created a somewhat unusual sausage. The Echo reported in October that Mrs Boughton had cooked up a “Black Magic” variety which combined pork and herbs with an altogether more unusual ingredient – chilli chocolate.
